Palak Paneer is a classic vegetarian dish from North India that combines soft cubes of paneer (Indian cottage cheese) with a creamy spinach sauce. Follow the steps below to make it at home:
Ingredients:
- 250 grams paneer, cut into cubes
- 500 grams fresh spinach, washed and chopped
- 1 tablespoon oil
- 1 tablespoon butter
- 1 teaspoon cumin seeds
- 1 medium-sized onion, finely chopped
- 1 tablespoon ginger-garlic paste
- 2 green chilies, finely chopped
- 2 medium-sized tomatoes, pureed
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala powder
- Salt to taste
- Water as needed
- Coriander leaves for garnish
Instructions:
- In a pot of boiling water, blanch the chopped spinach for 2-3 minutes. Drain and immediately transfer to a bowl of ice water. This will help the spinach retain its bright green color. Drain and set aside.
- Heat oil and butter in a pan over medium heat. Add cumin seeds and let them crackle.
- Add finely chopped onions and sauté until they turn golden brown.
- Add ginger-garlic paste and green chilies. Sauté for a minute.
- Add the pureed tomatoes and cook until the oil separates from the mixture.
- Add red chili powder, coriander powder, turmeric powder, and garam masala powder. Mix well and cook for 2-3 minutes.
- Add the blanched spinach and mix well. Cook for 2-3 minutes.
- Turn off the heat and let the mixture cool down. Once it has cooled, blend the mixture in a blender until smooth. Add water if needed to achieve the desired consistency.
- Return the mixture to the pan and heat over low-medium heat. Add the paneer cubes and salt to taste. Cook for 2-3 minutes.
- Garnish with coriander leaves and serve hot with roti, naan, or rice.
