Palak Paneer

Palak Paneer is a classic vegetarian dish from North India that combines soft cubes of paneer (Indian cottage cheese) with a creamy spinach sauce. Follow the steps below to make it at home:

Ingredients:

  • 250 grams paneer, cut into cubes
  • 500 grams fresh spinach, washed and chopped
  • 1 tablespoon oil
  • 1 tablespoon butter
  • 1 teaspoon cumin seeds
  • 1 medium-sized onion, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 2 green chilies, finely chopped
  • 2 medium-sized tomatoes, pureed
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala powder
  • Salt to taste
  • Water as needed
  • Coriander leaves for garnish

Instructions:

  1. In a pot of boiling water, blanch the chopped spinach for 2-3 minutes. Drain and immediately transfer to a bowl of ice water. This will help the spinach retain its bright green color. Drain and set aside.
  2. Heat oil and butter in a pan over medium heat. Add cumin seeds and let them crackle.
  3. Add finely chopped onions and sauté until they turn golden brown.
  4. Add ginger-garlic paste and green chilies. Sauté for a minute.
  5. Add the pureed tomatoes and cook until the oil separates from the mixture.
  6. Add red chili powder, coriander powder, turmeric powder, and garam masala powder. Mix well and cook for 2-3 minutes.
  7. Add the blanched spinach and mix well. Cook for 2-3 minutes.
  8. Turn off the heat and let the mixture cool down. Once it has cooled, blend the mixture in a blender until smooth. Add water if needed to achieve the desired consistency.
  9. Return the mixture to the pan and heat over low-medium heat. Add the paneer cubes and salt to taste. Cook for 2-3 minutes.
  10. Garnish with coriander leaves and serve hot with roti, naan, or rice.
