Paneer Pasanda is a popular Indian vegetarian dish that features stuffed paneer in a creamy and flavorful gravy. Here’s a recipe to make this delicious dish:
For the Paneer stuffing:
- 200g Paneer, crumbled
- 1/4 cup cashews, chopped
- 1/4 cup raisins, chopped
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon red chili powder
- Salt to taste
- 2 tablespoons fresh coriander leaves, chopped
For the Gravy:
- 2 tablespoons oil
- 2 bay leaves
- 1 cinnamon stick
- 2-3 green cardamoms
- 1 large onion, finely chopped
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- 2 large tomatoes, pureed
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon garam masala powder
- 1/4 teaspoon turmeric powder
- Salt to taste
- 1/4 cup cream
- 1/4 cup milk
- 2 tablespoons fresh coriander leaves, chopped
Instructions:
- In a bowl, mix crumbled paneer, chopped cashews, raisins, cumin powder, coriander powder, red chili powder, salt, and fresh coriander leaves to make the stuffing.
- Make a slit in the middle of a paneer slice without cutting it all the way through.
- Stuff the paneer with the prepared stuffing mixture.
- Heat oil in a pan and shallow fry the stuffed paneer until golden brown. Remove from the pan and keep aside.
- In the same pan, add bay leaves, cinnamon stick, green cardamoms, and sauté for a few seconds.
- Add finely chopped onions and sauté until they turn golden brown.
- Add ginger paste and garlic paste and sauté for 1-2 minutes.
- Add tomato puree and sauté until the oil starts to separate from the gravy.
- Add cumin powder, coriander powder, garam masala powder, turmeric powder, salt, and mix well.
- Add cream and milk and stir until well combined.
- Add the fried paneer pieces and let it simmer for 2-3 minutes on low heat.
- Garnish with fresh coriander leaves and serve hot with roti or naan.
